With Passion comes Quality, and as we are all perfectionists we ensure that this is evident throughout our products, courses, events and atmosphere of our boutiques.
Every chocolate curl, glazed raspbery topping and gold leaf garnish is added as a finishing touch to our products with expert precision. Perfection is the aim of the game!

Ethics...
William and Suzue ensure they source ethically sound coverture chocolate for their products by working exclusively with Tuscan-based company Amadei, for whom they are proud ambassadors.

Amadei are particularly attentive to improving the conditions in which the people who grow its cacao live and work.
Agronomists of the company visit the plantations at least twice a year to ensure these conditions are met,
thus creating a very unique bond with the local campesinos.

Currently operating in some plantations in Venezuela, Amadei has replanted many trees and several varieties of Criollo- the most rare and arromatic bean, only using criollo and the hyprid trinitario bean for their flavour and aroma.
The entire prodcution is meticulously followed by dedication and artizan skills right from the selection of the cacao beans, personally done by Amadei in the countries of origin, through to the manufacturing of the chocolate conducted in the laboratory of Pontedera,
before being sent to our kitchens where the meticulous perfection of the ultimate chocolate creation continues.
