A Patissier in Paris


In September this year William and Suzue took their team to Paris – home of patisserie – to sample a selection of the best cakes, desserts and chocolate France could offer. Taking the early morning Eurostar from St Pancras to Paris, they visited some of the most famous establishments in the capital including Jean Paul Hevin, Sadaharu Aoki and Pierre Herme.

"When I was first learning my trade I spent many weekends in Paris because it was without doubt the centre of the patisserie world. I passed hours traversing the patissier and chocolatier and bars of this vibrant city and learnt so much that I wanted to bring my team here so that they could experience what I experienced all those years ago."

"There were seven of us in total, wandering along the lanes and streets in search of culinary delights and we were not disappointed. I must have tasted over a dozen cakes alone on that visit and despite us getting lost a couple of times, we all thoroughly enjoyed the excursion."

"As a chocolatier, if there is one place in the world you don’t mind getting lost in, it’s Paris!"

 

October in Osaka


October saw Suzue and William head back to Suzue’s home city of Osaka as part of the British Fair. As the only fine chocolate makers at the event, they were given the opportunity to prepare and promote their exclusive range of products.

The Japanese appreciate quality. They aspire to be the best and that attitude sits well with my way of thinking. Our brand has become synonymous with excellence and as such, I am keen to actively associate my products with anyone sharing a similar aim."

It was the first time for the William Curley brand in Japan but it is a market they are very keen to expand into.

 

In fact they are already strengthening their association with the country by using Japanese ingredients such as Sudachi, Yuzu, Black Vinegar and Miso, William has even been experimenting with Japanese Whisky in their chocolates.

Toscano 70% chocolate mousse centred with a chestnut cream and marron glace, layered with hazelnut dacquoise and chocolate feullantine.

Blackcurrant Bavaroise layered with mulled wine poached pears, Gianduja cream and biscuit a la cuillère.

MILK CHOCOLATE & RASPBERRY
Milk chocolate cremeaux filled with a raspberry compote, nutty praline and almond biscuit.

CAPPUCCINO CHOCOLATE
Dark chocolate & coffee mousse centred with a mascarpone cream, mango & passionfruit caramel and vanilla sponge.

Chocolate Workshops


There’s more to chocolate than just the eating so for a complete experience William Curley offers you the opportunity to participate in a hands-on chocolate course with a senior chocolatier / patissier.

INTRODUCTION TO CHOCOLATE
Step into the shoes of a chocolate master as we firstly invite you to learn about chocolate through a “talk and taste” session. Next, participate in chocolate tempering under the guidance of one of our experienced chefs before taking on the exciting challenge of creating our gold-award winning sea salted caramels and chocolate gift bars.
TIME: 1hour 30mins £100.00 for two

TRUFFLE MAKING
Ever wondered what the secret is to making perfect truffles. Well, with the help of one of our trained chocolatiers you can experience first-hand how to infuse, blend and prepare this fine chocolate delicacy before creating your own truffles to take home.
TIME: 2hour 30mins £150.00 for two

PATISSERIE MAKING
William Curley gives you the chance to learn more about the art of patisserie. This workshop begins with a demonstration on how we produce our fresh patisserie and then allows you to prepare your patisserie to take home with the assistance of a trained patissier.
